Smoked salmon pizza with cream cheese and rocket

Serves 2
Time: about 20 minutes
Cost: About £2.50 - £3 a head


1 1/2 tbsp extra virgin olive oil
1 ready to cook thin, crispy pizza base (available from the chilled pizza section)
125g cream cheese
1 1/2 tbsp milk
2 tsp very finely chopped onion (optional but good)
A small (125g) pack of wafer thin smoked salmon (or ordinary sliced smoked salmon)
A quarter of a lemon or about 2 tsp lemon juice
A small pack of rocket
Freshly ground black pepper

Pre-heat your grill. Brush or smear a little oil over the top side of the pizza base. Cook for one minute each side under a moderate grill. Set aside and cool for 15 minutes. Turn the cream cheese into a bowl and mash up with the milk so you get a soft, spreading consistency. Add the chopped onion if using and season with freshly ground black pepper (you shouldn’t need salt as smoked salmon is quite salty). When the base has cooled down spread it with the cream cheese mixture then drape the smoked salmon pieces artistically over the top. Squeeze a little lemon juice over the salmon and season with black pepper. Take a handful of rocket leaves and pile them on top of the smoked salmon. Trickle a little olive oil over the leaves.
