Salmon Burger with Red Onion, Caper and Parsley Salad

![]() Serves 6 For the burger 1kg salmon 1 large knob of ginger (to taste) 5 garlic cloves 2 chillies (deseeded) ½ bunch coriander 1 lemon (zested and juiced) 1 lime (zested and juiced) 6 burger buns . Finely chop the salmon, ginger, garlic, chilli and coriander . Mix all the ingredients together along with the zest and juice of the lemon and lime . Shape the mixture into 6 burger patties then sear the burgers on each side for about 2 minutes . Place between a burger bun with a little mayo and baby gem lettuce For the salad 1 red onion Small handful of capers 1 bunch of parsley Salad dressing . Slice the onion finely then pick over and wash the parsley, removing the stalks . Toss all the ingredients together with a little salad dressing Serve alongside the salmon burger and enjoy! |
