Best-ever cheese on toast

Time: Under 15 minutes
Cost: Under £1 a head

A good chunk (about 75g) mature Cheddar or Lancashire cheese
1 tsp plain flour
2 tbsp milk
1 tsp brown sauce or 1/2 tsp Dijon mustard or 1/4 tsp English mustard
A couple of thick slices of wholemeal bread

Grate the cheese and put it into a small non-stick saucepan. Mix in the flour and the milk. Heat gently, stirring, while you make the toast. As soon as the cheese mixture is smooth stir in the brown sauce or mustard. Pour over the toast.
