A really good tuna sandwich filling

This is my daughter Kate’s favourite sandwich filling (along with homemade BLTs!) It makes enough for 1 generously filled sandwich, a large wholemeal bap or pitta bread or two smaller rolls

Serves 1
Time: 5-6 minutes
Cost: About 60-70p

1/2 a medium (200g) can of tuna
1 tbsp very finely chopped onion
1 heaped tbsp French-style mayonnaise
Freshly ground black pepper
A little grated lemon rind or a small squeeze of lemon juice (optional but good)
1 small pickled cucumber or half a larger one, finely chopped (again optional, but pickled cucumbers are quite cheap)

Drain the tuna and tip into a cup or bowl. Break it up with a fork then mix in the onion and mayo. Season with freshly ground black pepper (you shouldn’t need salt) and a little finely grated lemon rind or small squeeze of lemon juice if you have some. Stir in the chopped pickled cucumber if using then fill your sandwich or roll(s) -  having spread them first thinly with a soft butter (or other) spread.  If you don’t have any pickled cucumbers just top the tuna filling with thin slices of fresh cucumber, some snipped cress or some sprouted seeds.

TOP TIPS

* Pickled cucumbers are great in all sorts of sandwiches and rolls - smoked ham, salami, corned beef or pastrami and cream cheese (with smoked salmon if you feel like splashing out) After you've opened the jar keep them in the fridge

* Canned tuna is a storecupboard ingredient it's well worth buying in bulk (provided you like it, obviously). There are often special offers on it if you buy 3 or 4 cans at a time.
